I don't know about you, but since I've been quarantining/self isolating, I sure have been cooking up a storm. You've probably guessed I love to eat, since I seem to post nearly as many pictures of food as I do of mosaics here, but I also REALLY enjoy cooking. And right now, I have access to a kitchen, which is not always the case, and lots of time to do nothing but meal plan and cook.
So far, I've made no knead bread (which in fairness, I used to make in my past life), borscht, chicken with Tuscan beans, lobster (yes, lobster), shrimp saganaki, pandemic nachos, egg bites, egg salad sandwiches, mushroom pot roast, and cheesy scalloped potatoes. I'm having a good time, and my sister is loving having a "devoted housewife".
Interestingly, I know a lot of people who are managing to feed themselves better, not worse, in this crazy time. People have more time to think about and make the food that fuels them. My sister and I are doing are best to support local producers where we can as well, so my next loaf of bread will be from organic local flour that was milled on Friday.
